This one is for the true-blue BBQ Tradition of Smoked Brisket! This is an art that is making a comeback in culinary circles.  Normally this is considerd a tough cut as this part of the cow gets a lot of excercise, but when you cook it long and low like this, it becomes the juiciest most flavourful meat on a cow!.  we're not just saying that either - all muscles that are the most "worked" really do have the most flavour, just make sure you cook them right!

If you have a crowd to feed, polish up your smoking skills and give them a meal they won't forget!
